COLLARD GREENS

Stir-Fry Collards and Onions

Remember that the collards cook down a significant amount so you need to make sure to prepare enough for everyone. Standard is about 4 medium size leaves per person.

Serves: 5-7

Ingredients:
  • 25-30 collard green leaves
  • 1 onion
  • Coconut or vegetable oil
 
Directions:
  • Finely chop an onion and cut greens about ¾ inch thick and sauté in a small amount of cooking oil.
  • Other seasonings (salt, pepper) may be added as you desire, but make sure you are aware of everyone’s eating habits and preferences.
